Cooking Instructions
In a 5 or 6 quart pot, bring 6 cups of water to a rolling boil. Whisk in the contents of the spicy tortilla soup mix and 2 tablespoons of butter. Make sure you stir well. Add the 2 cups of corn to the soup mix.
Cover the pot and and let simmer for 15 to 20 minutes until the soup has thickened. Let the soup stand for five minutes

Evelyn's Elegant Edibles were inspired by holiday dinners at my grandmother's (yiayia) house. I come from a large Greek family and I have fond memories of the unique dishes prepared for the holidays. We only had certain dishes on special occasions because of the hours of preparation. Our goal was to replicate her recipe with the same quality ingredients and great taste without all of the work.
